        2、在大虾中放入两大匙料酒、盐拌匀;猪肉片中放一大匙料酒、盐、淀粉抓匀码味。
  3、锅中放油烧至六成热,下猪肉片炒散至表面发白。
  4、将肉片推至锅边或盛出,改小火,下姜、蒜、泡辣椒碎、八角、香叶、干辣椒段(我没用干辣椒)炒出香味。
  5、下油辣椒,再将锅中所有食料翻炒匀。
  6、加约一斤汤或水、老干妈香辣酱烧沸。
  7、下香菇烧约两分钟。
  8、再放入虾、葱白丁、白糖、盐、蚝油烧约三分钟。
  9、收浓汤汁,撒入香菜碎翻匀,盛入干锅里即可上桌。待吃完锅中的虾和肉后,便可点火再放入自己喜欢的其它菜烫食。

1、将鹌鹑蛋清净后下冷水锅中加盖煮沸,关火后闷五分钟以上。
2、五花肉放温水锅中用大火烧沸,改中火煮两分钟以去血沫。
3、五花肉捞出后切成约一厘米见方的块(可依个人喜欢的大小切块);鹌鹑蛋取出后用凉水浸泡约五分钟后去壳,用厨房用纸拭干水分;老姜拍破;香葱切成两段;干辣切段。

4、锅中放油烧至五成热,下鹌鹑蛋用中小火慢炸。
5、炸呈金黄色时捞出沥干油分。
6、锅中留约半汤勺油用微火烧至温热,下冰糖慢慢翻炒。
7、炒至锅中烟雾缭绕糖呈焦黄色。

8、倒入五花肉后立即关火,快速翻动肉块使之均匀地裹上糖色。
9、加约三斤汤或水(如果锅小可以分成几次加,但在中途加水时一定要是沸水),开大火烧沸后放入老姜、八角、花椒、桂皮、干辣椒、香葱、酱油、料酒,加盖后改小火慢烧。
10、烧半小时后下鹌鹑蛋、盐,用大火烧沸后改小火慢烧约一小时。

11、当汤汁将干时改大火收汁。
12、收干汤汁后关火,捡去葱、姜、八角、桂皮不要,将鹌鹑蛋摆放在盘子周围,再把肉盛进盘中即成。

老醋鸡块
        主料:鸡胸肉或鸡腿肉,
  调料:山西陈醋,糖,盐,料酒,蒜,姜,胡椒粉。
  做法:把鸡肉切成一半日母指大小的块,锅里水烧开焯变色后马上捞出。
  加入盐,料酒,胡椒粉放到冰箱冷藏一小时腌制,是为了肉能够遇冷收缩的更紧,吃起来口感更好一些。

红焖羊肉

材料:羊后腿肉、白萝卜、土豆
调料:辣椒酱、干辣、白胡椒粉、大料、大葱、姜、蒜、枸杞、红枣、桂皮、香叶、生抽、料酒盐、油
做法:
1、羊后腿肉洗净,切成小块。白萝卜、土豆去皮切块
2、烧一锅开水,水沸腾后将羊肉块放入焯2分钟后捞出,再用热水冲洗干净,沥干水分

4、将炒好的羊肉盛入砂锅中,加入大料、桂皮、香叶和清水,水要没过羊肉
5、水烧沸腾后,撇去沫子,加盐、胡椒粉,再加入萝卜、土豆块、红枣、枸杞,转小火炖约50分钟
